Sting (Gordon Matthew) and his wife Trudie Styler bought a domain a few years ago, which has been owned by a number of families and had become quite worn over the years, with the aim of completely transforming it into a wine estate. They have asked for help from a very famous winemaker, namely Paolo Caciorgna, who has offered help to several wine companies to refine the winery process. Il Palagio is a wine estate located near the medieval town of Figline Valdarno known as the 'farmhouse of Florence'. They owe this nickname to the abundance of corn that used to be there. The land here is very fertile and many different products are grown all over the area; including, of course, grapes! The domain of the couple is about 350 hectares with not only grapes but also beautiful forests, beautiful gardens and clear blue lakes. The domain has been owned by several families and grapes have been grown there for hundreds of years. Not only do they sell wine at Il Palagio, but also products such as honey and olive oil of the same top quality.

According to Sting, the wines of the Il Palagio domain are all "messages in a bottle". The domain makes delicious wines according to a process that they came up with after extensive discussion with several oenologists. Some of the vines are hundreds of years old and are on a slope that is perfectly situated for the Tuscan sun. Besides the wines, the domain is also known for its beautiful olive oil, the olives of which are picked from trees that are even older than the vines; some of the olive trees are 300 years old and have received the best care over the years.
