Domaine Denis Mortet is a winery located in Burgundy and it has vineyards in three areas. Domaine Denis Mortet originates from 1956 when Denis Mortet's father, Charles Mortet, started a winery with only 1 hectare. However, Charles did not yet make many of his own wines and he sold most of the production to neighboring wineries. Only after Denis Mortet and his wife Laurence joined the winery in 1978, the winery started producing its own bottles. In 1993 Denis Mortet took over from his father and Domaine Denis Mortet started, and Denis went on to buy vineyards. Domaine Denis Mortet today has about 12 hectares of vineyards.

Denis Mortet is a winemaker who takes care of his vineyards as if it were his children, he pays close attention to his vineyards, and this is certainly reflected in the wines produced by Domaine Denis Mortet. Denis was one of the first to exclude the use of chemical contraceptives in his vineyards, which he did in 1996. Since 1996, Denis has therefore only used vineyard and organic products to protect his vineyards. Arnaud, the son of Charles, takes this one step further: He only harvests in a natural way, and when the harvest time has come, he himself goes to the vineyards to taste and approve different grapes. All in all, these harvesting methods ensure a high quality of wine.

Three belts are used to sort the grapes to be able to sort the grapes well and efficiently on quality. The Pinot Noir grapes that come from the vineyards of Domaine Denis Mortet are very fleshy and fruity due to the conditions in which they grow and these flavors are certainly reflected in the top wines of Mortet. Denis Mortet has chosen to use 100% new oak wood to make his wines, which is not very common for winemakers from Burgundy and makes for unique wines. The wines are aged on this oak wood for an average of 18 months and are placed in steel barrels for 1 month before the wine goes into the bottles.
