The vines are planted in a clay and calcareous soil and can be found around 100 meters above the Dordogne riverbed. "At high altitudes" this helps the vines avoid the damaging effects of the fog that often intrudes on the banks of the river. It also allows natural ventilation of the vines and therefore no chemical intervention or anti-botrytis/fungal treatment is required. The wine has a beautiful red color and the nose is full of aromas of red fruit, blackcurrant and notes of vanilla. The wine is medium-bodied with good acidity and benefits from supple tannins and a generous finish with good balance. A very pleasant fruit-driven glass of wine and an excellent accompaniment to meat dishes (entrecote, grilled duck breast, game), cheeses (Langres, Tome d'Auvergne, old Gouda) and desserts with red fruit. The Cava +&+ Brut Selección has been chosen as the best Cava of Spain in the Wines of Spain Award (WS'22) program which consists of a jury of wine producers, journalists, sommeliers and WSET and is led by Tim Atkins (see tab: Appendix). The Pinord +&+ Seleccion Brut Cava NV is a rich but floral 'traditional method' sparkling wine, made from the traditional Catalan grapes of Parellada, Xarel-Lo and Macabeo. This is a great aperitif and delicious with lean cheese, fried river fish, ham, tapas and of course with sushi.

This white Soave from Veneto is produced in very small quantities. The Fiori Bianchi is a blend of 80% Garganegam and 20% Trebbiano Veronese from an old vineyard on a soil of limestone, tuff and clay. Naturally, the grapes are picked by hand and this beautiful white wine has a straw yellow color with green-golden reflections. On the nose, wine is fresh and fragrant with notes of spring such as white flowers: hawthorn, elder, cherry, iris and magnolia. On the palate the wine is perfectly balanced with delicate and persistent mineral flavors, almond and white peach. This fantastic white wine from the Grandcru of Valpolicella: the Vajol can easily compete with the high-end Soave's, but at a much more attractive price.
