Region, climate and location

The grapes for La Cuvée Blanc de Blancs come from Limoux, in the south of France. This region is known for its cool influences and long ripening seasons, which preserve freshness and aromatic development. These conditions are particularly suitable for Chardonnay with tension and complexity.

Vineyards

Organic Chardonnay from select plots is used. The focus is on grapes with sufficient ripeness and aromatic concentration to retain structure and depth even after dealcoholization.

Grape varieties and composition

The wine is made from 100% Chardonnay. The choice of a pure Blanc de Blancs style emphasizes the focus on freshness, minerality, and refined texture.

Harvest, vinification and maturation

After harvest, fermentation takes place in stainless steel at low temperatures to preserve aromatic precision. The wine then matures for six months in large new oak barrels, which contributes to its structure and complexity. Dealcoholization follows via vacuum extraction, a method aimed at preserving aromas and mouthfeel.

Color, smell and taste

La Cuvée Blanc de Blancs is the absolute pinnacle of alcohol-free wines, and in our opinion, you won't find anything better. La Cuvée Blanc de Blancs boasts a bright, golden yellow color. The aroma is remarkably complex, with notes reminiscent of aged Blanc de Blancs: caramelized nuts, candied fruit, dried herbs, mocha, and dried apricot. These aromas are complemented by nuances of toasted bread and vanilla. On the palate, the wine is rich and layered, with a creamy texture and distinct depth. The finish is long and refined, with a subtle hint of anise adding tension.

The wine was described as an excellent example of a non-alcoholic sparkling wine with great complexity and depth. Particular attention was given to its ripe, layered aroma profile and compelling structure, strongly reminiscent of classic Blanc de Blancs styles.
