The vineyard of Château Pavie covers 42 hectares. It is a large entity, but contains different terroirs, each with its own microclimate. Château Pavie is often one of the last wineries to complete the harvest. They work responsibly: 70% of the vineyard is now treated organically, they aim for 100%.
Today, Gerard Perse is the man in charge. A self-made man and millionaire from Paris. The son of a painter took over a small grocery store in a suburb in 1976 and subsequently achieved enormous success with franchise supermarkets for Champion (Carrefour). Until he only wants to work on wine. In 1998, after purchasing several other wineries, he bought Château Pavie. In the region he is seen as a denier of Saint-Emilion wines because of the techniques he applied, for example the early cutting of unripe bunches of grapes to limit production and increase quality. Considered an outrageous waste at the time, today almost everyone does it. The success of his wines has improved his reputation considerably. Not only Parker, but also other international wine critics give the highest scores. And wine with a story.
The 2023 Château Pavie is a blend of 51% Merlot, 32% Cabernet Franc & 17 Cabernet Sauvignon. The grapes come from 34-year-old vines spread over 42 hectares in Saint-Emilion. The ground is divided into 3 different planes. First you have the limestone plateau of Saint-Émilion, located about 85 meters above the Dordogne river. This consists of clay and limestone soil on limestone with marine fossils (2/3 of the vineyard). Then comes the Côte Pavie, the “medium mountain range”, 55 meters above the Dordogne river, facing south. This consists of a brown clay-limestone soil with a fine texture. Finally comes the “Pied de Côte”, consisting of sandy, sandy-clay and sandy-gravel soils. Prune up to 8 buds for the old vines and up to 6 buds for the young vines. Thinning, leaf stripping, is adapted to each plot. The grapes are picked and sorted by hand. Vinification in temperature-controlled wooden barrels. Malolactic fermentation in barrels. Finally, the wine is aged in 75% new oak, 25% one-year-old barrels.

The depth and intensity is really out of this world. The richness is there, but it's all in balance and has an almost weightless feel to it. It's medium- to full-bodied with purity and definition, and the magic of limestone soils keeps the pH low, giving energy, bright acidity and verve. Terrific young red. 51% merlot, 32% cabernet franc and 17% cabernet sauvignon.

From: The Dalmatian Vintage: Bordeaux 2023 (Apr 2024)
The 2023 Pavie was picked from September 18 to October 5 at 32.76hL/ha, with some Cabernet Franc actually picked after the Cabernet Sauvignon. Raised in 72% new French oak plus one-year-old barrels, this has a very well-defined and fresh bouquet that articulates the terroir with some style. It is completely different from the Pavie wines I tasted at the estate 10 to 15 years ago—more classical and sophisticated. The palate is medium-bodied with a clean and precise entry. It's lightly spiced with a subtle marine influence—shucked oyster shells and seaweed are embroidered through the black fruit. There's a dash of black pepper toward the finish that remains focused and feels long in the mouth. This is an excellent Pavie in the making.

The 2023 Pavie is fabulous. Rich, dense and explosive in the glass, it offers up generous dark red fruit, cedar, spice, pipe tobacco, menthol and mocha. The 2023 impresses with its notable density and sheer palate presence. Naturally, this needs time to be at its best, but it is already incredibly expressive. This is a superb vintage for Pavie.
