Bodegas Shayo was founded by Juan Gil and belongs to the Gil Family Estates . The Shaya Habis Verdejo (also known as: Verdejo Habis Gran Vino de Rueda or Habis Old Vines) is their top line and is a white wine from the DO Rueda made from 100% Verdejo from very old vines with very minimal yields, planted in the southeastern part of the province of Segovia - in the south of the Rueda appellation. The poor sandy soils force the roots of the old vines to go meters deep in search of water. This further thickens the minerality. The wine is made by the Australian winemaker Belinda Thomson, from the Crawford River winery, good for 100/100 Parker.

The Shaya Habis is a special selection of very old Verdejo vines that is also barrel fermented and matured on the lees for 9 months in large oak barrels of 500 and 600 liters. The vines are trained in the vaso system and planted in very sandy soils. Many of the vines are not ungrafted and very old so in many cases older than 100 years (pre-phylloxera)

In the glass, the Shaya Habis is straw yellow with a green tinge. On the nose we smell notes of musky aromas of peach pit, lemon peel and pear, with a smoky undertone. Concentrated, tactile and dense, with a juicy, mineral quality with fresh pit fruit and herb flavors. The Habis finishes clear and long and repeats the spicy tone and shows the richness of its old vines. This beautiful sur lie hout matured Verdejo is an excellent accompaniment to seafood such as stuffed mussels, oysters, shrimp and scallops but also delicious with a paella or with rice dishes. This wine is very similar in style to an Ossian or Belondrade and can compete with many high-end white Burgundies in a blind tasting at Prowein 2023 this wine was placed in a line-up with top white wines including top Burgundies and the Habis came out as the winner.
