Capitel Foscarino is one of the wines that Anselmi makes from a single vineyard. The name Capitel is the name for a single vineyard in these regions. This should only be used for wines that come from the particular slope. Capitel Foscarino is a south-facing vineyard, 350 meters above sea level, with a calcareous, volcanic subsoil that quickly drains any rainwater. The vineyard covers 10 hectares and produces approximately 45 hectoliters per hectare. The selection of the harvest on the Foscarino is strict and therefore takes place twice. The grapes used for this wine are always very ripe and therefore produce a wine with power and richness. During vinification, cold maceration of the must takes place, after the pneumatic press the juice is fermented under a controlled temperature of 16 °C. After this process, the wine is placed in stainless steel barrels with natural yeast cells for 6 months and undergoes batonnage. The wine matures in the bottle for the last 6 months. The wines have a storage potential of ten years.

In the glass, the Anselmi Capitel Foscarino has a seductive golden yellow color. The Anselmi Capitel Foscarino is golden yellow in the glass. This rich Soave from a special cru has the scent of honey, apricot and peach in the nose with a rich and powerful mouth, exotic and full, with some bitter in the long and complex aftertaste. A very nice Soave made from matured garganega.

Roberto Anselmi is one of those who strictly adheres to the ground rules. In fact, he's one of the producers who promotes others to do the same. Anselmi sees it as the importance of the region (Veneto, Northern Italy) that the overall quality of the wines improves. Not an easy mission. Where others have given way to the planting of the worldwide so popular chardonnay, Anselmi limits itself to a modest five percent.

Anselmi is also one of the few to have more vines in its vineyards than officially prescribed: 5000 to 7000 per hectare. The much lower yield per stick as a result yields wines that are fuller and more powerful in character. In addition, all his poles are on the better slopes, so in the Classico region. The quality of the wines starts in the vineyards, Anselmi knows better than anyone. Quality is therefore what makes Roberto Anselmi. A great winemaker who practices his profession with fanaticism.
