2021 Strydom The Freshman Sauvignon Blanc

This dusty fresh 100% Sauvignon Blanc comes from Napier / Stellenbosch. This is a fresh, vibrant style of Sauvignon Blanc. In the glass, the wine has a light straw yellow color with a green tinge. The wine is wonderfully fresh with a good balance between cut grass and tropical notes with lots of passion fruit and even floral notes. We also smell Granny Smith. The taste has a soft acidity full of fruity flavors at the end. In terms of style certainly comparable to a handsome New Zealand but at a clearly more pleasant price

At Strydom they have had an ideal place. The vineyards have very low yields and are located in cooler areas and this gives the wines of Strydom freshness, elegance and a nice acidity. The Strydom Freshdom was created by a very passionate and gifted winemaker and only 2850 bottles were made of the Freshman.

The grapes were picked by hand in the morning. In the basement, it was bruised with a nitrogen-filled press to avoid oxidation as much as possible. The must has been in contact with the skin for 6 hours before further pressing the juice. Again, the juice was collected in a container filled with dry ice to protect against oxygen. The juice was left to rest at a very low temperature for two days to allow everything to settle gently.

This is a more delicious wine and especially delicious with nothing, because it is the perfect aperitif. But if you are going to serve it with a meal, think of fresh salads, light fish dishes or young goat's cheese.
