Description
The Pavie 2021 is a blend of 52% Merlot, 30% Cabernet Franc and 18% Cabernet Sauvignon. It matures in French oak barrels, of which 75% are new oak barriques. Colored opaque purple-black, notes of plum pudding, blueberry pie and dark chocolate-covered cherries rush out of the glass, closely followed by hints of eucalyptus, star anise, tobacco and fertile loam with a hint of cedar wood. The full palate is built like a brick house, offering very firm but wonderfully ripe, velvety tannins and seamless freshness to support the densely loaded, muscular black and blue fruit, with a long finish and plenty of mineral layers.

The vineyard of Château Pavie covers 42 hectares. It is a large whole, but contains different terroirs, each with its own microclimate. Château Pavie is often one of the last wineries to complete the harvest. They work responsibly: 70% of the vineyard is now treated organically, they aim for 100%.
Today, Gerard Perse is the man in charge. A self-made man and millionaire from Paris. The son of a painter took over a small grocery store in a suburb in 1976 and subsequently achieved enormous success with franchise supermarkets for Champion (Carrefour). Until he only wants to work on wine. In 1998, after purchasing several other wineries, he bought Château Pavie. In the region he is seen as a denier of Saint-Emilion wines because of the techniques he applied, for example the early cutting of unripe bunches of grapes to limit production and increase quality. Considered an outrageous waste at the time, today almost everyone does it. The success of his wines has improved his reputation considerably. Not only Parker, but also other international wine critics give the highest scores. And wine with a story.

The 2021 Pavie is a wine of tremendous potential. Naturally, it shows the more mid-weight style of the year and yet there is plenty of depth as well as energy that starts to emerge with a bit of time in the glass. Bright saline notes shape the wine while extending the finish and adding so much drive. The 2021 is shaping up to be a very special wine. All it needs is time.

This is a gorgeous set of wines from the Perse family. The 2021s marry the textural richness that is such a signature here with the bright acids and overall energy of the year. It’s a combination that works so well.

The 2020 Pavie is very clearly one of the wines of the year. Rich, inky and wonderfully vibrant, it pulses with energy from start to finish. All the elements are well balanced. Soaring Cabernet Franc aromatics lead into a core of finely knit yet deep fruit in a wine that feels endless. Harvest for the reds started on September 17, paused briefly during some rain on the 25th and 26th, and then wrapped up by the end of the month. The blend is 50% Merlot, 34% Cabernet Franc and 15% Cabernet Sauvignon, so more Cabernets than in the past, the result of a large replanting program that began in the early 2000s. A real head-turner. Magnificent!
