The Arômes de Pavie 2021 is the 2nd wine from Chateau Pavie and is a blend of 50% Merlot and 50% Cabernet Franc. It matures in French oak barrels, 70% of which are new French oak. In the glass the wine is a deep purple-black color. Still closed in its early years, but with some waltzing comes the lush scents of stewed black plums, black cherry compote and red and black currants. The wine further has aromas of tar, baked herbs and charcoal. On the palate, the Aromes de Pavie is full body wrapped in layers of black fruit, framed by soft tannins and tons of freshness and finishes long and earthy.
About the Château Pavie winery
The vineyard of Château Pavie covers 42 hectares. It is a large whole, but contains different terroirs, each with its own microclimate. Château Pavie is often one of the last wineries to complete the harvest. They work responsibly: 70% of the vineyard is now treated organically, they aim for 100%. Today, Gerard Perse is the man in charge. A self-made man and millionaire from Paris. The son of a painter took over a small grocery store in a suburb in 1976 and subsequently achieved enormous success with franchise supermarkets for Champion (Carrefour). Until he only wants to work on wine. In 1998, after purchasing several other wineries, he bought Château Pavie. In the region he is seen as a denier of Saint-Emilion wines because of the techniques he applied, for example the early cutting of unripe bunches of grapes to limit production and increase quality. Considered an outrageous waste at the time, today almost everyone does it. The success of his wines has improved his reputation considerably. Not only Parker, but also other international wine critics give the highest scores. And wine with a story.

The 2021 Arômes de Pavie is gorgeous, and also quite harmonious for a young barrel sample. A burst of floral aromatics makes a strong opening impression. Crushed rose petal, red berry fruit, mint, blood orange and spice all race across the palate. The Arômes is everything a second wine should be. It's such a classy wine.

This is a gorgeous set of wines from the Perse family. The 2021s marry the textural richness that is such a signature here with the bright acids and overall energy of the year. It’s a combination that works so well.

The 2020 Arômes de Pavie represents a major step up in quality vis-à-vis previous vintages. It is a deep, statuesque wine endowed with tremendous power, richness and resonance. Plum, mocha, licorice, espresso and spice all flesh out in the glass. I can't wait to taste this in bottle. This is the first year in which the blend is equal parts Merlot and Cabernet Franc, both increasingly from plots dedicated to the Arômes, a departure from the past, when this wine was a selection of younger-vine fruit and lots that did not make it into the Grand Vin.

The 2020 Arômes de Pavie, which comes from specific parcels, contains a much higher percentage of Cabernet Franc, half the blend instead of the 18% in the 2018. It was vatted for 31 days and matured in 70% new oak. Deep in color, it has an intense bouquet of blackberry, pencil lead and a faint touch of tobacco, the new oak conspicuous but in sync with the fruit. The palate is medium-bodied with fine-grained tannins, plenty of black plummy fruit laced with bilberry, and a saline undercurrent. A stocky Deuxième Vin, but it manages to maintain decent balance and freshness. I hope we see the Cabernet Franc at this level in the blend going forward.
