Description
Located 18 km southeast of Beaune, this 1er cru is located below the Château de Saint-Aubin, nestled in the hollow of a combe. This climate benefits from the colluviums on the valley floor, which provide significant drainage to the vineyard. The vines were planted in 1981 and 1999 facing south.
Immediately after the manual harvest, the grapes are pressed in whole bunches in a pneumatic press and then the juice is allowed to settle statically for 24 hours at 12°C. The must is then placed directly into barrels where the alcoholic and malolactic fermentations are carried out. The wine is aged for 12 months in French oak barrels, of which 20% are new barrels.
The Prosper Maufoux Saint-Aubin 1er Cru Clos du Château has a green-gold color in the glass with bright reflections and a salty, slightly toasted nose with lemon aromas and brioche. On the palate, this energetic wine reveals a beautiful balance and notes of vanilla. This delicious Saint Aubin is recommended with grilled turbot with citrus peel.

The first impression on the nose is of caramelized tree fruit and flint, but this Saint-Aubin is still very young. On the palate all the elements we expect for this appellation are there, from the salty minerality to the restrained lemon and crisp pear fruit. Well-structured with excellent freshness for this warm vintage. Only at the long, stony finish do you feel the oak a bit, but these are early days for a wine made to age. Drinkable now, but best from 2024.

Prosper Maufoux was founded by its name bearer in 1860 in Santenay, in the south of the Côte d'Or, where it remained in the hands of the Maufoux family for almost a century and a half in 1994. In 1860, Prosper Maufoux, a notary by profession, left his office to devote himself to his passion for wine. He founded his own house in Santenay, a Burgundian village in the south of the Côte d'Or, in the heart of the vineyards. His son Cyprien looked beyond the borders and brought Prosper Maufoux wines to the tables of England, the Netherlands, and the United States. He created a culture of openness to the world at home. The takeover in 2010 by Eric Piffaut resulted in significant investments in the winery, which resulted in a huge increase in quality. Prosper Maufoux is currently housed in the Château de Saint-Aubin, where there is plenty of room to guarantee the qualities achieved for the future. Towards the great growth in the south of the Côte de Beaune, in the heart of the Côte des Blancs, between Chassagne and Puligny, and the immediate vicinity of Montrachet.
