De Pago de Carraovejas is een haast bordeaux aandoende wijn en is onvergelijkbaar met andere Ribera del Duero's. De 2021 jaargang is een blend van de drie op het landgoed aanwezige variƫteiten: 92% tempranillo, 5% cabernet sauvignon en 3% merlot. De wijn is zeer complex en mooi geproportioneerd. Niets overheerst en bij het ruiken en proeven komen met de tijd diverse lagen vrij. Ceder, Aziatische kruiden, viooltjes, tapenade, en bramen-aroma's in de neus. In de mond fruit met zachte houttannines met klein vanilletoontje van opvoeding op Amerikaans eikenhout. De smaak is medium- to fullbodied en zeer evenwichtig met fijne, strakke tannines en een zijdezachte textuur. Qua stijl valt deze wijn te vergelijken met een Aalto uit zijn goede jaren en dat is ook weer niet gek daar de voormalige wijnmaker en directeur Javier Zaccagnini van Aalto heeft nauw heeft samengewerkt met Pago de Carraovejas en Javier Zaccagnini is tevens eigenaar geweest van Ossian welke momenteel nu ook valt onder Pago de Carraovejas groep. De huige groep Alma Carraovejas heeft naast Pago de Carraovejas ook Ossian, Vina Mein en Emilio Rojo in de portefeuille.
Pago de Carraovejas is de meest eerlijke weerspiegeling van de vallei waaraan het zijn naam dankt. De Tempranillo, Cabernet Sauvignon en Merlot wijnstokken zijn verspreid over verschillende hellingen van Vallei van Carraovejas gelegen in een wildernis op een hoogte van ruim 900 meter. De wijngaarden zijn geplant op tertiaire grond. Op het oppervlak komen leemachtige kalksteen tevoorschijn, met de aanwezigheid van klei, zandsteen en gips met de karakteristieke witte tint. Het is een sobere bodem, die de wijnstokken onderwerpt aan een poging om zelf de opbrengst te beheersen en het beste van zichzelf te geven. Dit zijn bodems die de wijnstokken dwingen zichzelf te reguleren en hun best doen. De wijngaarden zijn verdeeld van de middelste zones tot aan meer dan 900 meter; van de zachte golving die afdaalt naar de beek, tot percelen met een stijgingspercentage van meer dan 30%. Hellingen op het zuiden en noorden, elk met hun eigen persoonlijkheid, schetsen het profiel van de Carraovejas-vallei. De druiven voor Pago de Carraovejas werden met de hand geoogst na een eerste selectie van trossen in de wijngaard. Vervolgens werd er in de wijnmakerij een dubbele selectie gemaakt: eerst op tros en vervolgens op bes. De zwaartekracht moet bij de productie een maximaal respect voor de grondstof mogelijk maken. Tijdens het fermentatieproces werd gebruik gemaakt van inheemse gisten en melkbacteriƫn van eigen landgoed. De wijn rijpte 12 maanden in Franse en Amerikaanse eikenhouten vaten.
Weetje: Naast Ossian heeft de Pago Carraojevas group ook het prachtige in Galiciƫ gelegen wijnhuis ViƱa Mein opgenomen. Geweldige wijnen gemaakt met een zee-injectie. Eind 2020 heeft men tot de groep (Alma Carraovejas) Milsetentayseis La PeƱa toegevoegd (wijnen van zeer oude Pre-Phylloxerastokken) en de de iconische wijnen (altijd tussen de 95-100 parkerpunten) van Emilio Rojo. In medio 2021 is de laatste aanwinst welke nu behoort tot de groep Bodega MaraƱones uit de Sierra de Gredos. In de Tab: Bijlage vindt u de officiƫle factsheet van deze fraaie wijn. OVER WIJNOOGST 2021 RIBERA DEL DUERO
De wijnoogst van 2021 werd gekenmerkt door een winter met veel regenval, die een homogene vegetatieve cyclus in de wijngaard bevorderde, terwijl spontane en gezaaide dekkingsgewassen hielpen de kracht van de wijnstokken onder controle te houden. Eind april was er een wijdverbreide knopuitbraak zonder enige klimatologische incidenten. De wijnstokken ondervonden geen enkele hinder in de ontwikkeling en evolutie van de knoppen, wat resulteerde in zeer goede opbrengsten die dankzij de uitdunningstechniek in evenwicht waren. De oogst duurde langer dan normaal vanwege incidentele perioden met regen; het begon op 22 september en eindigde op 14 oktober.

The eponymous 2021 Pago de Carraovejas comes from a cooler year when they consider the grapes had exceptional quality. The bottled wine is composed of Tinto Fino with 5% Cabernet Sauvignon and 3% Merlot with 15% alcohol but good freshness and integration of the oak after spending 12 months in 226- and 600-liter barrels. It's medium to full-bodied, with fine tannins, a juicy mouthfeel and a tasty finish. This is a more elegant Carraovejas. It was bottled in the spring of 2023.
The Ruiz Aragoneses family continues to expand their business and recently bought TricĆ³ in RĆas Baixas. At Pago de Carraovejas, the original winery in Ribera del Duero, they produce 724,000 bottles, and they are a commercial success in Spain. The wines I tasted showed more freshness and better integration of the oak within their style.

The 2020 Pago de Carraovejas is a blend of 92% Tempranillo, 5% Cabernet Sauvignon and 3% Merlot from Querada del Botija in PeƱafiel, Ribera del Duero. Aged for 12 months in French (80%) and American (20%) oak barrels, it's garnet-red with a purple sheen. The aromas begin with enticing notes of strawberry, blackcurrant, sour cherry, spice and finely tuned oaky layers. On the palate, it's dry and juicy, with finely-grained tannins and a chalky texture invigorated by well-balanced acidity. Compared with previous house vintages, this is a precise new style for Ribera del Duero.

Sommelier and owner of the JosĆ© MarĆa restaurant in Segovia since 1982, JosĆ© MarĆa Ruiz decided to create a wine for his restaurant. In 1987, Ruiz began the Pago de Carraovejas project in PeƱafiel, Ribera del Duero, which evolved into one of the region's most dynamic wineries. Aludena Calvo oversees winemaking and has implemented a rejuvenated approach, blending Bordeaux varieties with Tempranillo. Pago de Carraovejas originally started with the first nine hectares and this has already become a reference winery in the heart of the Ribera del Duero. It all started more than three decades ago, when Pago de Carraovejas was founded in response to a dream of JosĆ© MarĆa Ruiz to create a great wine in one of the areas that had the greatest potential at the time.
JosĆ© MarĆa's history in the wine world had already begun several years earlier, in 1971, when he appeared as a representative of Spain at the 'First Global Contest for Sommeliers' in Milan. That experience was the beginning of his desire to open his own restaurant and make his own wines. Although he was still fully involved in the catering world since the opening of the renowned Restaurante JosĆ© MarĆa in Segovia in 1982, he remained determined to launch his project for a small wine cellar that would produce wines of the best quality for his restaurant.
This is how the history of Pago de Carraovejas began when he opened the wine cellar in PeƱafiel in 1987, specifically in the hills of Carraovejas. The location of these first nine hectares was chosen because they were an important historical center for Ribera del Duero wines and in one of the areas with the greatest potential for Spanish wines due to their location, soil and climate. This was the start of a project that has already produced more than thirty volumes.
The scope of what started as an ambitious dream has expanded tremendously over the years since the company was founded. In 2007, a new era began when JosĆ© MarĆa's son Pedro Ruiz joined the project. This new leadership brought with it a fresh business perspective that, faced with the exponential growth of Pago de Carraovejas, decided to take on new challenges in sustainability and use them as criteria that would determine the company's activities; innovation as a driving force for progress and development; and enotourism as a means to open the project to all their customers with transparency and integrity.
Pedro Ruiz's leadership also marked the beginning of a new era under the concept of Alma Carraovejas (Soul of Carraovejas) that entails the search for unique landscapes that will help fulfill the dream of restoring and caring for unique legacies on the field of wine. -creating for future generations. The Alam Carraovejas group has a number of very famous wineries under its wing and only the best is good enough. Ossian, Maranones, Emilio Rojo, Vina Mein are wine houses belonging to the group. Top international houses. Visiting the winery is an absolute experience with the impressive wine cellar but also the Michelin-star restaurant AMBIVIUM which is in the top of the best Restaurants in Spain.
Pago de Carraovejas has unique wines, each with its own unique, extremely fascinating personality. The wines have very expressive aromas, intense color, fleshy, powerful and exuberant taste that manifests each of the characteristics of each variety. In recent years, this bodega has made a huge boost and is now one of the top houses in the Ribera del Duero.
Nice to know, but Jose Maria Ruiz serves the house wine in his restaurant in Segovia under the name "Autor" and this is a special version of the Pago de Carraovejas wines and it is only available in his restaurant. The restaurante JosĆ© Maria is located on the Plaza Mayor in the city of Segovia in Spain and is managed on a daily basis by RocĆo Ruiz, Pedro's sister.
