In 1983 nam Denis Bachelet het beheer over van het landgoed van zijn vader, dat slechts 4 hectare besloeg. Alle wijngaarden bevinden zich in of rond Gevrey-Chambertin en zijn voornamelijk beplant met oude tot zeer oude wijnstokken. Bijna al het werk in de wijngaard wordt uitgevoerd door Bachelet en zijn zoon. De kelder, nauwelijks groter dan een gemiddelde woonkamer, bevindt zich onder een oude schuur, in een zijstraat van de rijksweg in Gevrey. Op de gevel is geen verwijzing naar het landgoed aanwezig; alleen een stukje verweerd papier verraadt dat hier een van de beroemdste landgoederen van de Bourgogne ligt.
Net als veel andere grote landgoederen is Bachelet ervan overtuigd dat het werk in de wijngaard voor 90% bepalend is voor de kwaliteit van het eindproduct. De oude wijnstokken, gelegen op zeer oude percelen, worden zorgvuldig gesnoeid en met grote toewijding verzorgd. Na aankomst in de kelder ondergaan de wijnen een korte koude maceratie, waarna ze een alcoholische gisting ondergaan. Vervolgens rijpen de wijnen ongeveer 18 maanden in houten vaten, waarvan ongeveer 30 tot 50 procent jaarlijks wordt vernieuwd, voordat ze ongefilterd worden gebotteld. De stijl van Bachelet laat zich omschrijven als bijzonder intens, elegant en verfijnd, met een bijna vrouwelijke touch. Na de oogst rijpt deze prachtige wijn nog 16 - 18 maanden op eikenhouten barriques, waarvan 50 - 80% nieuw. Er wordt niet gefilterd.
De Denis Bachelet's Côte de Nuits-Villages 2019 heeft mooi frisse en verse aroma's van cassis, pruimen en kersen met hints van zoete kruiden en leembodem alles geperst in een uitnodigend boeket. Medium tot vol, vlezig en gelaagd, geconcentreerd en textuur, met levendige zuren en fluweelzachte tannines. Een collectors-item en zeker nu de opbrengst in 2019 40% lager was dan te doen gebruikelijk.

Bachelet's 2019 Côte de Nuits-Villages is shaping up beautifully, mingling notes of cassis, plums and cherries with hints of sweet spices and loamy soil in an inviting bouquet. Medium to full-bodied, fleshy and layered, it's concentrated and textural, with lively acids and velvety tannins. If there's a sleeper in the portfolio of this sought-after domaine, this cuvée—from the lieu-dit Queue de Hareng in Brochon—is it.
Denis Bachelet has done it again. The 2019 vintage is a brilliant success at this address, and its only disadvantage is that yields were some 40% below average. As a result, Denis decided to combine all his communal Gevrey-Chambertin holdings into one cuvée, so there is no Evocelles this year. I also revisited several 2018s from bottle—I'm ashamed to say, selfishly opting to taste the cuvées I purchased for my own cellar—and was delighted to find that they have realized all the considerable potential they showed from barrel. Of course, followers of this estate will be familiar with the rudiments of the contemporary Bachelet style: old vines, destemmed berries and gentle extraction, followed by élevage in barrels, of which up to 30%—for the Charmes-Chambertin—are new and most of which derive from Tonnellerie Rémond. As I have reported in the past, Bachelet has been punching down less since the 2014 vintage, evolving in the direction of finesse and structural suppleness without sacrificing depth or incipient complexity. This is one of my favorite estates in Burgundy, and though small production and high demand make them hard to find—and surely all the more so in 2019—I encourage readers to seek out Bachelet's exquisite wines.

I had to forego my baguette for lunch, but the wines were worth the sacrifice. Covid aside, the pandemic is not the only challenge that Bachelet has faced in recent months. “The summer dryness means that we are 40% down in terms of quantity,” a rueful Bachelet told me as we descended down the precariously steep steps to the barrel cellar. “There have been three consecutive dry seasons and it is beginning to affect the vines. There is just no water. In 2020 it was even less. I started picking on 14 September.” What can I say that I have not written before? From the entry Côte de Nuits-Villages up to the Charmes-Chambertin, all the 2019s bare the hallmarks of Bachelet’s style: pure red fruit aromas, stunning delineation, machine-tooled precision and bewitching grace on their finishes. The only downside is that the shortfall means there is no Les Evocelles this year.

Denis Bachelet nam in 1983 het bijna 4 hectare 'grote' domein over van zijn vader. Op het kleine domein bevinden zich nog zeer oude wijnstokken (30 jaar bij de regionale AOC's tot 100 jaar bij de Charmes Chambertin!). De natuurlijke opbrengst van deze hoogbejaarde wijnstokken is bijzonder laag, maar dat vond de perfectionistische Denis Bachelet nog niet goed genoeg. Door zeer drastisch en laag te snoeien wordt de maximale opbrengst nog verder verlaagd. Gezien de kleine omvang van het domein, de hoge leeftijd van de wijnstokken, de perfectionistische drang naar de allerbeste kwaliteit, is het geen wonder dat de wijnen van Denis Bachelet wereldwijd zeer gezochte cult artikelen zijn geworden.
